Copenhagen Food Collective (COFOCO) has announced the appointment of James Spreadbury as the group’s first CEO of hotel operations, overseeing its award-winning Coco Hotel and the soon-to-open Hotel Bella Grande. Spreadbury brings over 22 years of hospitality experience to this newly created role, having previously served as Service Director at the world-renowned Noma restaurant.

Spreadbury, originally from Adelaide, Australia, began his career in hospitality at a young age, driven by a passion for food and service, instilled by his family and the South Australian wine region. His European journey began in Copenhagen in 2009, where he joined Noma, a restaurant known globally for its innovation in fine dining. During his 12-year tenure as Service Director, Spreadbury played a key role in Noma’s success, including assisting with iconic pop-up restaurants in Tokyo, Sydney, and Mexico, as well as the opening of Noma’s casual eatery, Popl.

After a brief return to Australia in 2022, where he consulted on hospitality projects and operated a restaurant and delicatessen in the Adelaide Hills, Spreadbury has returned to Copenhagen to lead COFOCO’s hotel division. In his new role, he will focus on enhancing guest experiences, managing day-to-day operations, and leading the teams at both Coco Hotel and Hotel Bella Grande.
